Wordless Wednesday: Huevos Rancheros Black Bean Burgers
A flavorful black bean patty with eggs, cheese and your favorite salsa make a fast, easy and meatless meal!
After a lot of thought, I’ve decided to start a new series on my blog: Wordless Wednesdays. Maybe it will be a recipe, maybe just an ingredient, but always something that inspires me to post interesting food photography. So, no more words, just enticing images:)
Huevos Rancheros Black Bean Burgers Recipe

- 2 Slices Sharp Cheddar Cheese
- 2 tablespoons Butter (divided)
- 2 Large Eggs
- Prepared Salsa
- Fried Tortilla Strips (found in the salad topping isle)
- Thinly Sliced Jalapeños
Black Bean Burger
- 1 can Black Beans
- 1/2 tablespoon Garlic Powder
- 1/2 tablespoon Onion Powder
- 1 tablespoon Ground Cumin
- 2-4 tablespoons Bread Crumbs
- Salt (to taste)
Black Bean Burger (Optional)
- 1/4 tablespoon Ground Chipotle Powder
Black Bean Burgers
Combine the black bean burger ingredients except the breadcrumbs.
Mash the beans with a potato masher or fork until most of the beans are mashed, leaving some whole. Add in the breadcrumbs until the mixture is thick enough to be formed into patties.
Divide the bean mixture in half and shape each half into a patty. Patties can be refrigerated until ready to cook.
To cook the burgers, melt 1 tablespoon of the butter over medium heat in an oven-safe skillet. Add patties and brown on each side, about 5 minutes.
While patties brown, preheat oven to 350 degrees. After the patties have browned on both sides, put the skillet in the oven to allow the burgers to warm through, about 6 more minutes. Remove from oven and top with cheese.
While the burgers cook, make the fried egg. Melt butter over medium heat in a skillet.
Once butter melts, crack egg into skillet and cook over medium heat until the whites are cooked and set. Repeat with the remaining egg.
To assemble the burgers, place lettuce, fried tortilla strips, burger patty on a bun. Top with salsa and a fried egg. Add sliced jalapeños if using.
