Vegetarian French Onion SoupSometimes it is in a seemingly awful day that life seems to make sense. This summer we took a last minute trip to Paris-we visited the Louvre, saw the EiffelTower, and walked aimlessly to see the city. But one cold, misty afternoon we set out to wander until we found someplace interesting to stop for a late lunch. We walked all the way from the Notre Dame to the EiffelTower (with a four and five year old in tow, this is a long distance). We were all cold, grumpy and tired and couldn’t find a restaurant that looked good with a menu that everyone would enjoy. And then we all got hangry (you know, hungry-angry) with each other. We were almost resigned to head back to the hotel, order crappy room service and pretend like the day hadn’t happened. Then we stumbled upon a small bistro on a small side street. The interior was warm and the waiter was courteous. And it was during that warm meal on a cold day that I knew, once again that Edward was meant to walk this journey with me. He had not judged the entire vacation when I ordered French Onion soup at every restaurant, bistro, or pub we stopped in. He withheld judgment when I went back for my second, third, fourth bowl…a day. I’m sure at some point during our trip that I had eaten so many caramelized onions that the smell of onions was wafting from my pores. But he didn’t hesitate to order me another bowl and smile while I slurped it up in that small bistro on a small side street on a chilly Parisian afternoon. Vegetarian French Onion Soup Recipe


  • 1 tablespoon Unsalted Butter
  • 1 tablespoon Olive Oil
  • 4-5 Large Red Onion (Sliced)
  • 1 teaspoon Salt
  • 5 sprigs Fresh Thyme Sprigs
  • 3 cloves Garlic (minced)
  • 1 cup Dry Red Wine
  • 1 tablespoon All-Purpose Flour
  • 8 cups Mushroom Stock
  • 1 Loaf of Crusty Bread (sliced into 1/2 rounds)
  • Guyere Cheese


Caramelized Onions
Step 1
Heat olive oil and butter in a heavy-bottomed pot over medium heat just until the butter melts. Add the onions and salt and lower heat to the lowest setting.
Step 2
Add garlic and thyme to onions and cook until the onions are a deep caramel color, stirring often about 40-50 minutes.

Onion Soup
Step 3
Add wine to the onion mixture and continue to cook on low until most of the liquid has evaporated.
Step 4
Add flour to the onion mixture and cook for 1-2 minutes. Add the broth and bring to a boil
Step 5
Reduce heat and simmer soup for 20 minutes.

Crusty Top
Step 6
Heat the broiler. Arrange bread slices on an even layer on a baking sheet and bake 3-4 minutes until the bread is crusty.
Step 7
Rub the tops with a piece of cut garlic immediately after coming out of the oven.

Onion Soup
Step 8
Laddel the Soup into oven-safe bowls. Top with garlic croutons and cover with cheese.
Step 9
Place bowls under the broiler for 3-4 minutes, or until the cheese is browned and bubbly. Serve Immediately
