Tex-Mex Turkey Burgers with Black Bean-Pineapple Salsa and Chipotle Honey Mustard by Mom De Cuisine
Whew, that title is a mouthful but the recipe is actually fairly simple. In fact, it is sort of a repeat on this blog. One of my very early blog posts (almost three years ago!) was my awesome Tex-Mex turkey burgers. I’ve changed up the recipe a bit, and the photography ALOT. In fact, that post was somewhere in the beginning of my photography journey. I was at the point of realizing I wanted, no needed, to improve. Since then I have improved (just LOOK at those images! Yikes!!!) but I am still enjoying the journey. I read books, pour over blogs, and take workshops. I see no end in sight, and week-by-week strive to be a better photographer. Although some days I feel as though I’ll never be good enough, but honestly I feel pride when I look back at how far I’ve come.
Tex-Mex Turkey Burger Recipe

- 1lb Lean Ground Turkey Meat
- 1 Large Red Onion
- 4 Hamburger Buns
- 1/4 cup Pickled Jalapeños
- 1 bunch Cilantro (stems removed)
- 1 Chipotle in Adobo Sauce (plus one tablespoon of adobo sauce)
- 1 tablespoon Cumin
- 3 cloves Garlic
- 4 Slices Pepper-Jack Cheese
- 1 cup Black Beans
- 1 cup Pineapple Chunks
- 1 Small Red Onion (chopped)
- 1/2 cup Cilantro (stems removed, chopped)
- 1/2 cup Yellow Mustard
- 1/4 cup Whole Grain Mustard
- 2 tablespoons Honey
- 1 tablespoon Adobo Sauce (from can of chipotles in adobo)
Comine the onion, garlic, chipotle, adobo, cilantro, and jalapeño, and salt in a food processor. Process into a paste.
Combine the paste with the turkey meat, being careful not to over mix it. Let marinate for at least one hour, but up to 24 hours.
Form turkey meat into patties. Grill burgers until cooked through about 15 minutes, flipping occasionally. Top with pepper-jack cheese the last 5 minutes of cooking.
While burgers grill, combine salsa ingredients. Refrigerate until ready to use
While burgers are grilling, combine mustard ingredients. Refrigerate until ready to use
To assemble burgers, grill buns 2-3 minutes. Generously slather grilled buns with mustard. Place patties on buns, and top with salsa. Serve immediately.
